Jean Martin Fortier - "The Market Gardener"
This is a great book for almost everything you may want to know about small scale market gardening. It's a great reference book to have and probably a great place to start if you are thinking about this profession as it goes into planning, marketing, the profession as well as the growing bit. It's written from a canadian perspective - there are lots of pests over there that we don't have here luckily. based on a shorter growing season and harsh winters - but you can use the principles. Perhaps if anything is lacking is a chapter about water and irrigation, drippers, set ups etc, water quality.
